誕生於12世紀,法國最受歡迎的Comté,1958年成為頭幾個受AOC保護的乳酪之一,規定只能以香濃著稱的蒙貝利爾(montbéliarde)乳牛及法國西門塔爾(French Simmental)乳牛的乳汁製造,1976年AOC進一步規定產區範圍包括:艾因(Ain),杜省(Doubs),吉哈(Jura),索恩-盧瓦爾省(Saône-et-Loire)和上薩瓦省(Haute-Savoie)。以主要產區Franche-Comté命名的Comté,在勃艮第Bourgogne (Saône-et-Loire)和中部隆河阿爾卑斯地區Auvergne-Rhône-Alpes,以及上薩瓦Haute-Savoie也有生產。30頭乳牛一天的總乳量,才能夠製作生產一輪重達32-45kg的Comté,年產量約4萬噸,被認為是世界上最好的乳酪之一。

一般來說,Comté具有水果和烘烤的香氣,也會有植物或辛辣的味道。關於Comté的83種風味描述,主要分為6大類:乳酸、果味、烤肉、蔬菜、動物和辛辣。夏季生產的以果味為主,往往有更複雜的香氣,冬季生產的往往有更多的植物和烘焙風味。一個好的Comté將包括鹹味、酸味、甜味和苦味之間的良好平衡。根據乳酪的年齡而有味道的變化,淡黃色的內部和紋理,可以從柔滑,鬆弛到結晶變化。呈現出具有美麗芳香複雜性的特點。口味因季節與生產者而異,淡淡的鹹香氣,主要的奶油香和烤堅果香氣之間的平衡以及甜美的味道。具有奇妙的香氣層次表現,如果香、杏仁、榛子和太妃糖的味道,幾乎適合與任何一種葡萄酒搭配。容易融化的特性,可以添加到各種食譜中,使每一種料理具有自然獨特的味道。特熟成的Comté尤其必須經過熟成師層層嚴格挑選,才能靜置在阿爾卑斯山Haut-Doubs森林的Granges Maillot隧道地窖中,長達24~36個月的熟成期,成熟的Comté酪蛋白結晶增強了活潑而明顯的性格與口感,飽滿豐富的層次,滿足風土愛好者的需求,深受世界頂級饕客與米其林大廚的喜愛。

AOC規定:

-限定牛種只能吃當地的牧草或穀物,當天採集的鮮奶必須馬上製作

-夏天鮮奶為14-18度C凝乳時間為14小時,冬天為4度C凝乳時間為36小時

-只能在凝乳的時候加熱1次,溫度不能高於40度C

-乳酪的外皮只能直接用細鹽加鹽或海水(滷水)進行熟成

-熟成的地窖,溫度必須低於19度C,濕度92%,熟成最少90天以上

-熟成的乳酪會以20分根據口感/香氣/質感和外觀來評分,20-15分為Comté Extra標籤腰帶為綠色,15-12分為Comté標籤腰帶為棕色,12分以下,不可使用AOC及Comté等字樣標示

口感層次:大圓鼓型,暗黃色的外皮,會有地窖熟成產生的灰色和白色的斑紋,切開後麥黃色的內芯,口感溫和質地細緻,具有奶油般濃郁的甜香氣味,隨之而來的鹹香和厚實的堅果香氣,帶有果香、杏仁、榛子和太妃糖的味道。熟成較久的Comté散發熟蛋黃般的濃厚香氣,酪蛋白結晶顆粒具有複雜的層次表現,具有烤肉排的動物香氣與辛香的刺激味。

賞味方式:直接吃就是美味,法國人多半切片當開胃菜或是配長棍麵包吃。適合入菜料理,配水果或沙拉就是簡單輕食,Croque-Monsieur三明治或Fondue乳酪鍋,都是讓食物增加獨特風味的吃法。搭配來自吉哈的白葡萄酒,勃根地或隆河谷Côtes du Rhône的葡萄酒,都是不錯的選擇。

保存方法:購買開封後以2~6度C冷藏,以保鮮膜或防油紙包好,避免乳酪水份流失或冰箱內其他食物的污染,而降低口感風味或腐壞。

The Comté Expression Badoz is taken through the Granges Maillot tunnel, a former railway tunnel cut into the rock, located in the heart of the Haut-Doubs forests, after a first rigorous selection by the cellar master. Only those counties which are suitable for aging and which are deemed to be able to improve for more than 24 months are kept. The lively and pronounced taste amplified by its supple texture and its presence of light salt crystals will satisfy lovers of the terroir.Comté is one of the favorite cheeses of the French and the leading French Protected Designation of Origin cheese in terms of tonnage (65,600 tonnes in 2017, or around 1,600,000 wheels). Comté has been an AOC since 1952 and an AOP since 1996. Comté is a very old cheese which originates from the need of the peasants of Haut-Doubs to survive during the winter. This is why the Comté has this shape of a wheel weighing more than 40 kg. Indeed, it is because it takes a very large quantity of milk, about 400 liters, to produce a cheese wheel, that the milk producers have come together to produce this precious cheese. This is how the famous "fruitières" were born.The Comté presents the characteristic of having a beautiful aromatic complexity. The flavors from one cheese wheel to another vary enormously from one producer to another and according to the season. In general, it presents fruity and roasted aromas but the Comté can also present more vegetal or spicy notes. There are 83 flavor descriptors grouped into 6 major aromatic families: lactic, fruity, roasted, vegetable, animal and spicy. Counties produced in summer tend to have more complex aromas, with a more fruity dominance, while Counties produced in winter tend to have more vegetal and roasted flavors. A good Comté will include a nice balance between salty, acidity, sweetness and bitterness. It is best enjoyed at a temperature between 15 and 18 °.Each wheel of Comté PDO that comes out of the cellar is rated on the basis of different criteria, of which taste is the most important. The marks go from 1 to 20. If the cheese of Comté AOP presents a mark starting from 14/20, the wheel can receive a green band "Comté bell". An AOP Comté cheese that has a score between 12/20 and 14/20 will have a brown band. Finally, wheels that receive a score of less than 12/20 will be downgraded and will not benefit from the Comté designation.
